일주일에 2번씩 하는 NBA 게임을 보자니 난 꼭 game food가 있어야만 했다. 농구경기 자체가 나의 동기부여가 되지는 않기에. (적어도 처음엔 그랬다.)








그래서 우선 칩을 사고 그것만 먹자니 허전. 그래서 그 다음 날엔 아보카도를 하나 사서 집에 있던 실란트로와 무쳐(?) 과카몰리를 만들어 먹고,








그 다음 게임 땐, 캔토마토를 뜯어 바질화분에서 몇잎, 마지막 남은 갈은 치즈들을 섞어 되는대로의 살사를 해 먹음. 

올해 초에 텍사스로 처음 놀러왔을 때 매일같이 먹던 멕시칸식 음식, 특히 black beans 또는 refried beans 는 소화도 참 잘 된다는 것을 배웠다.

How to store beans
Keep dried beans in an airtight container in a cool, dry, dark place for up to 1 year. The older the beans, the longer they take to cook.

How to soak beans
The easiest way to soak beans is to cover 1 pound of beans with 8 cups cold water in a big pot or Dutch oven and let them sit overnight. For same-day results, combine the beans and water in the pot and bring to boiling. Reduce heat and simmer for 2 minutes. Remove from the heat and let stand, covered, for 1 hour. Drain and rinse the beans well.

Tip: Add a pinch of salt to the soaking water to make the beans softer. Make sure to rinse the beans well since salt will toughen the beans as they cook.

How to cook dried beans
Cook the beans according to your recipe. Or place the soaked and rinsed beans back in the pot and cover with 8 cups fresh water. Bring to boiling; reduce heat. Simmer, covered, for 75 to 90 minutes or until tender, stirring occasionally.

Tips: To speed up cooking, add ½ teaspoon baking soda to the cooking water.

For the best flavor and texture, cook beans the day before they are served and allow them to cool in their cooking liquid. This allows more time for the flavor to develop and for the beans to soak up some of the liquid. Though it's ideal to soak the beans until the water is cool, you don't have to cool completely before draining.

Using canned beans: It's quick and convenient to cook with canned beans. Rinse and drain the beans before cooking since the liquid in canned beans is typically high in sodium.







How to make refried beans

Refried beans are not actually fried -- they're cooked twice, a process that gives them their flavor. Use refried beans as a side dish, as a dip for tortilla chips, or as a filling for tostadas, burritos, and enchiladas. You can use homemade and canned refried beans interchangeably.

1. Soak and drain ½ pound pinto beans as directed above.
2. Cook the beans (following directions above) for 2-½ to 3 hours or until the beans are very tender.
3. Drain the beans, reserving the cooking liquid.
4. In a saucepan cook garlic in olive oil.
5. Add the beans and mash them with a potato masher.
6. Stir in just enough of the reserved cooking liquid to make the beans smooth and pastelike.
7. Continue to cook until thick, stirring often to avoid sticking and scorching.
8. If desired, top refried beans with shredded cheese, snipped cilantro, or chopped green onion.


집에 만들어 놓으면, 사 먹는 딥 대신에 칩과 함께 먹으면 좋겠다.

Lemon basil dip




Need:
1/4 fresh lemon juice
1 teaspoon sugar
1/2 cup fresh basil leaves
1/2 teaspoon salt
1/4 cup fresh parsley leaves
1 clove garlic, chopped
1 cup mayo

1. In a blender or food processor, combine all ingredients except mayo. Process until smooth.
2. In a medium bowl, whip mayo until creamy.
3. Stir in herb mixture.
4. Cover and refrigerate until ready to serve.

Hot sweet onion dip



Need:
1 (4 ounce) package of cream cheese (softened)
1/2 cup mayonnaise
1/2 cup parmigiano reggiano (grated)
1/2 cup sweet onion (chopped)
pepper to taste

1. Mix everything and place it in a baking dish.
2. Bake in a preheated 350F oven until the top is nice and browned, about 30-50 minutes.

시금치가 들어간다는 이유 하나만으로 몸에 좋다 정당화하기에는 크림과 버터가 너무 많이 들어간다.


Classic creamed spinach, the kind you’re likely to be served in a restaurant, is rich with cream and butter. But it tastes just as rich when you use olive oil béchamel. This dish makes a terrific accompaniment to fish.


2 tablespoons extra virgin olive oil

2 tablespoons finely chopped shallot or onion (optional)

2 tablespoons flour

2 cups low-fat (1 percent) milk, plus additional for thinning out the creamed spinach if desired

Salt to taste

Freshly ground white or black pepper

2 pounds spinach, stemmed and washed thoroughly, or 1 pound baby spinach, rinsed

Pinch of freshly grated nutmeg

1. Make the béchamel. Heat the oil over medium heat in a heavy medium saucepan. Add the shallot or onion, and cook, stirring, until softened, about three minutes. Stir in flour, and cook, stirring, for about three minutes until smooth and bubbling but not browned. It should have the texture of wet sand. Whisk in the milk all at once, and bring to a simmer, whisking all the while, until the mixture begins to thicken. Turn the heat to very low, and simmer, stirring often with a whisk and scraping the bottom and edges of the pan with a rubber spatula, for 10 minutes until the sauce has thickened and lost its raw flour taste. Season with salt and pepper. Strain while hot into a heatproof bowl or a Pyrex measuring cup, then return to the saucepan.

2. Bring large pot of generously salted water to a boil and add the spinach. Blanch for 30 seconds, and transfer to a bowl of ice water. Drain and squeeze dry, taking the spinach up by the handful. Chop fine, and stir into the béchamel. Add the nutmeg. Thin out with 2 tablespoons milk if desired, or more to taste. Bring to a simmer over low heat, and simmer very gently for five minutes, stirring often. Serve.

Yield: Serves four to six.

Advance preparation: You can make a béchamel and blanch the spinach up to a day ahead; keep separately in the refrigerator. Combine, thin out if desired with a little milk, and heat gently in a heavy saucepan before serving.

Nutritional information per serving (based on four servings): 176 calories; 8 grams fat; 2 grams saturated fat; 8 milligrams cholesterol; 21 grams carbohydrates; 5 grams dietary fiber; 245 milligrams sodium (does not include salt added during cooking); 8 grams protein
